Organic Asparagus with Lemon Vinaigrette
1 lb. organic asparagus (fresh or frozen)
1/4 cup organic lemon vinaigrette (recipe follows)
Lemon Vinaigrette
1 organic lemon
1/3 cup cold pressed extra virgin olive oil
Squeeze lemon for 1/3 cup of juice. Combine with sea salt and pepper to taste. Whisk in oil in a slow stream.
Cook asparagus your favorite way (boiling, steaming, etc.) Drain asparagus well and pat dry. Gently toss asparagus with vinaigrette, sea salt and organic pepper to taste. Serves 4.

Organic Glazed Carrots
1 lb organic baby carrots
2 tbs organic butter
1/3 cup packed organic brown sugar
Cover and simmer carrots in a small amount of steamed distilled water (salted if you like), for approx 10 min. until crisp tender. Melt the butter, add brown sugar , heat till dissolved. Add organic carrots, cook over med-low heat approx 10 more mins turning often. Serves 6.

Organic Green Beans Amandine
1 lb organic green beans fresh or frozen
1 tbs organic slivered almonds
2 tbs organic butter
1 tsp organic lemon juice
Cook the organic green beans (steaming is best to retain nutrients). Drain. Cook the almonds in butter, over low heat, stirring occasionally, till golden. Remove from heat and add lemon juice. Pour over beans. Serves approx 6.

Organic Broccoli Asian Style
1 lb fresh or frozen organic broccoli
2 tbs organic butter
2 tbs organic sugar
2 tbs organic soy sauce
4 tsp organic sesame seeds, toasted
Steam broccoli. Combine butter, sugar and soy sauce. Heat till butter melts and sugar dissolves. Pour over broccoli and top with sesame seeds. Serves 6
