Organic poultry adds variety to your meat menu and is better for you than red meats.
Meat provides protein to your diet but did you know that organic soybeans are a complete protein and rice and beans together, make a complete protein as well?

Organic Wild Rice Stuffed Game Hens
2 tbs organic butter
1/4 cup chopped organic onion
2 tbs chopped organic celery
1 tsp chopped fresh organic thyme leaves
1 1/2 c cooked organic wild rice
4 dried organic apricots, diced
2 tbs organic dried cranberries
2 tbs organic raisins
1/3 cup toasted organic pecan pieces, broken
1 tbs chopped organic parsley
sea salt and organic black pepper to taste
4 organic game hens
4 tbs organic butter
1 tbs organic balsamic vinegar
Preheat Oven to 400*
In a medium skillet heat the 2 tbs butter over med low heat. Saute the onions and celery until softened (approx 10 mins). Add thyme and cook for 1 min more.
In a mixing bowl combine the onion mixture with the rice, dried fruits, nuts, parsley and season with sea salt and pepper to taste.
Place approx 1/2 cup of the stuffing into the cavity of each bird. Tie legs of birds together. Melt the 4 tbs of remaining butter with the vinegar. Brush the birds completely with the butter mixture, salt and pepper.
Place the organic game hens on rack in large roasting pan, breast side up. Roast for approx 80 minutes or until they register 170* at the thigh.
Set the birds aside loosely cover with foil for about ten mins before carving. Split hens in half through the breast with shears (easiest) or a knife.
Keep stuffing intact. Arrange birds skin side up on a platter. Garnish with sprigs of parsley if desired. Serves 8.
Hint: Serve extra rice. Those little birds don't hold much!

Organic Duck with Orange Sauce
1 Organic Duck
Orange Sauce
1/3 cup organic brown sugar
1/3 cup organic sugar
1 tbs organic cornstarch
1 tbs organic orange peel, grated
1 cup organic orange juice
1/4 tsp sea salt
Preheat oven 325*
Roast duck for 2 1/2 to 3 hours. During last 30 mins baste with orange sauce.
Combine all orange sauce ingredients in a saucepan, stir over low heat until sugars dissolve. Simmer until transparent, about 3 mins. Serves 4-6.
Serving suggestion: with organic rice pilaf or wild rice.

Organic Turkey and Broccoli Pie
2 cups organic turkey, cooked and chopped
2 tbs organic butter
1/4 cup onion, chopped
2 tbs organic flour
1/4 tsp sea salt
1/2 tsp organic garlic powder
1 1/4 cups organic milk
1- 3 oz package of organic cream cheese
1 organic egg, beaten
1- 10 oz bag organic frozen broccoli
1 frozen organic pie crust, bottom and top (available on-line)
8 oz organic cheddar cheese, sliced
Preheat oven 350*
Heat butter in skillet and brown onion, add turkey. Stir until warm, stir in flour, salt and garlic powder. Add in milk and cream cheese, cook until smooth.
Stir 1 cup of mixture into beaten egg. Return mixture to skillet. Cook over med heat until thickened, 1-2 mins. Add broccoli and pour into pie crust.
Arrange cheese slices on top. Put on top crust and crimp edges, cut vent slits. Bake for 45 mins. Serves 8
